From a food truck to a farm-to-table destination. This is the story of how obsession with quality became a whole restaurant.

The Beginning

From farmers markets to a permanent table.

“In 2017, I began selling grass-fed beef from my family's farm at farmers markets throughout the Valley. While sharing Provenza Farm's product with the community was deeply fulfilling, I quickly realized that I wanted to do more than simply sell beef — I wanted to translate the story, labor, and integrity of the farm into something experiential.

That realization led me, in 2019, to purchase a food truck and formally enter the restaurant industry. Despite having no traditional culinary training, I was driven by confidence in my palate and a belief that our flavors carried something distinctive and worth sharing. Four years at the McAllen Food Truck Park allowed me to refine that vision, culminating in the opening of our permanent home.

This unconventional path has been marked by countless recipes, long nights, burnt hands, and more than a few ruined batches of cream — yet every step has only deepened my commitment to the craft. At its core, my work remains what it was from the beginning: a devotion to bringing my family's grass-fed beef from the farm to the table, and from our land to the community we serve.”

Source Local

We work with farms within 100 miles. If we can't source it locally, we don't serve it. Period.

Made From Scratch

Every sauce, every dough, every cure. We make it in-house. No shortcuts, no pre-made anything.

No Waste

Scraps become stock. Overripe fruit becomes sauce. We respect the food and the farmers who grow it.

Meet Diego.

Self-taught, palate-driven, and deeply rooted in the Valley. Diego started selling Provenza beef at farmers markets, learned the trade on a food truck, and four years later opened the permanent table you're sitting at.

Diego still sources produce himself, still visits the farms, and still comes out to your table to ask how everything was. That's not marketing — that's just who he is.
